N.B.:

The Monte Veronese is a P.D.O. cheese, produced in a specific geographical area in the north of Verona between Lessinia and Baldo mountains (Garda Lake).

The Monte Veronese is produced in three different types:
  • Fresh Monte Veronese P.D.O. Semi-cooked cheese, produced exclusively with whole cow milk, raw or pasteurised. The ripe ranges from 25 to 60 days, the weight from 7 to 10 kg.
  • Medium Monte Veronese P.D.O. (d'allevo mezzano)
    Semi-cooked cheese, produced exclusively with semi skimmed cow milk. The ripe ranges from 3 to 6 months, the weight from 6 to 9 kg.
  • Aged Monte Veronese P.D.O. (d'allevo vecchio)
    Semi-cooked cheese, produced exclusively with semi skimmed cow milk. The minimum ripe is approx. one year. The weight ranges from 6 to 9 kg.
The Monte Veronese is quoted weekly by the Verona Chamber of Commerce.
