Curd drainage and maturation systems DMC are flagship of the production of the company located in Peveragno (CN), since June 2015 part of the GEA group, and ideal completion of the automation process for transformation of milk into pasta filata cheeses. DMC systems allow to automatize the delicate phase of curd maturation and transfer to the stretching machines leaving to the operator only a supervision and control task.

DMC are compact (installation and operation spaces are very limited), easy to be used (with consequent low use and maintenance costs) but at the same time they are a brilliant and refined solution which eliminates the manual operation of cutting the curd in blocks and turn the curd over for drainage. DMC allow maturation under whey (or even under water at the same product temperature for a better "cleaning" of the curd) for the wished time and then drainage of the acid whey. The whole process is electronically controlled by PLC.
As all the CMT’s machines also DMC systems are equipped with arrangement for CIP cleaning and are manufactured to avoid shadow areas, non-radiused corners or other details that are not suitable for a perfect and safe hygiene. They are also equipped with sensors and safeties which eliminate any possible risk for the operator for his own safety and also against possible wrong operations which may harm the machine or the production process.
DMC, internationally patented by CMT, represent the highest evolution of the curd maturation systems thanks to a greater possibility to control the process, reduced dimensions and mechanical simpler construction compared to the traditional systems with belts or baskets.
Coupling with cylindrical coagulators with horizontal axle CF, curd transport systems with belt or auger, CMT’s stretching, moulding and hardening lines allow the realization of high quality dairies for production of pasta filata cheeses with very high automation degree (the operator must control and supervise the process only) and special attention to hygiene and sanitizing conditions.
